Nettle Soup

Mame tu cas velikonocni a tak mozna nekomu prijde vhod koprivova polevka, at Vam chutna:-))
Preparation time: 15 minutes
Cooking time: 30 minutes
Serves: 6-8

2 1/2 cups nettles
60g butter
30g fine oatmeal
850 ml stock
280ml milk

Wear gloves when you are collecting the nettles and only choose the young, bright green leaves. Remove any stalks and chop up the leaves. These days a food processor will do the job in a fraction of the time it takes to chop them by hand. Melt the butter in a large saucepan. Add the oatmeal and cook until the mixture is a golden brown. Remove the pan from the heat and add the stock. Bring it to the boil and add the milk. When it is boiling again, add the chopped nettles and cook for another few minutes. You may need more seasoning, depending how much seasoning there is in the stock.
